zucchini pancakes which I was able to freeze for multiple meals. To eat them, I sprinkled them with a cinnamon and sugar mixture before drizzling on maple syrup.

this one. I toasted the bread soaked in olive oil and rubbed with garlic and put shredded mozzarella on the bread before adding the bruchetta. Very tasty and it made a great lunch paired with a salad.

zucchini chips with my last zucchini. I used Italian bread crumbs rather than plain, and they turned out pretty tasty. I ate the whole zucchini in one sitting!
